As a family restaurant, without the resources of giant corporations with test kitchens and focus groups, we’ve always relied on our customers to tell us what’s best. Here’s what we found out over the last 26 years.
Quality and taste matter more than anything else. That’s why we start with premium dough ingredients milled and blended by a West Coast company dedicated to producing only the highest quality products for the food service industry. We add filtered water at exactly 72 degrees, to trigger the yeast fermentation process. Then we mix our dough for just six minutes and 45 seconds. This short time allows the ingredients to bind properly and keeps the flour glutens intact, which prevents the dough from being tough. Once the dough is mixed, we weigh precise portions then hand-form them into dough balls. Then we allow our dough to rise overnight, under controlled refrigeration. After exhaustive sampling and comparison by customers, the decision was unanimous to use Stanislaus Brand, Fresh Packed tomato products for our pizza and marinara sauce. Stanislaus actually pays cash premiums to growers, based on the quality of their tomatoes. Sure, it costs more than other products but there’s no price on the best taste. With a solid foundation of great dough and sauce, we add only 100% real cheeses. We use part skim mozzarella, which has less butterfat and is more healthful than whole milk cheese. We also offer fresh Feta, imported Gouda and a nice Parmesan-Romano blend on different pizzas.
Fresh vegetables and meat top off our pizzas. We get produce deliveries three to four times a week and inspect every item to ensure maximum freshness and flavor. If something doesn’t measure up, we refuse it on the spot and call the sales rep immediately. We’ve been buying Fresh Italian meats for decades, from two local companies. New York Sausage supplies our fresh Italian sausage and linguica. They also own and operate Nicolino’s Garden Café so they know a thing or two about good food. We buy our salami and pepperoni from Milan Salami out of Emeryville. We prefer the delicious flavors of fresh regional, handcrafted meats over mass produced national brands. We know you love them too.
Once your pizza is assembled, it goes into our CTX oven. Each cooking chamber has four temperature controls to insure that your pizza is cooked perfectly from top to bottom. Pizzas are baked at 670 degrees for 6.9 minutes. The high temperature and quick cook time sears the meat and seals in the flavor of all the toppings on top of a golden brown crust.

We’re proud of our pizzas. That’s why we have big pictures of them on our walls and menu. We always strive to process your order and get your pizzas out as quickly as possible without sacrificing quality. However if there is a line please be patient. Sometimes it takes 15 minutes to get an order, sometimes it takes 45. Usually it falls somewhere in between.
